One row of sweet potatoes dug. On the left is the rest of the sweet potatoes (and weeds) and on the right is my sorghum sudangrass cover crop, which is supposed to be excellent for heavy clay soil because of the massive amount of organic matter it generates. We will see.
So, sweet bell peppers. Are you eating enough? Because I feel like enough I’m not selling enough 🙂 Unless some other farmer has more delicious ones and you’re going over there…anyway, did you know that red, yellow and orange peppers have 3 x the Vitamin C as oranges? That they can help prevent blood clot formation and reduce the risk of heart attacks and strokes? That they are an excellent source of potassium, folate, lycopene and beta carotene, are highly beneficial for the brain and have anti cancer compounds?? Delicious for snacking on while making dinner, eating dinner and also while thinking about dinner.
Easy stuffed peppers – no cooking! -Cut the bell peppers in half and take out the seeds. Pulse these ingredients in the food processor: a can of chickpeas drained, 1/4 c mayo, 1 Tb apple cider vinegar, a small dollop of mustard, 1 tsp sea salt and some hot pepper if you like – until it’s a nice salady consistency, and stuff your fresh pepper halves with it. Delicious and SO MUCH FIBER 🙂
And a dip recipe for okra. For after you roast it on the grill or in the oven. Also delicious on grilled eggplant!
There are the most adorable tiny tree frogs in the okra. This one is bigger, but lots of them are so tiny, like the size of a ladybug! So cute. I’m feeling concerned about his little hip bones sticking out…
See you tomorrow!
