Market Stuff for February 2.

I’ll be at the Charlotte Regional Farmers Market tomorrow until around 11am.

I’ll have some lettuce, collards, chard, black radishes, baby leeks and green onions, Covington and Beauregard sweet potatoes, hard red winter wheat, and I’ll have our 100% grass fed & grass finished, Animal Welfare Approved Angus beef in these cuts:

ribeye, NY strip, sirloin, flank, flap steak, flat iron, short ribs, brisket, sirloin tip roast, eye of round roast, boneless chuck roast, soup bones, hot dogs.

I thinned out these crowded baby collards so that’s what I’m bringing tomorrow.

I’ve got onions coming up in the greenhouse and yesterday I finished my first round of tomato flats, and parsley and cutting celery. I haven’t taken soil samples yet so I’ve got to get on it, and seed potatoes will be here this month!

I’ll be looking for someone to help me a few hours a week this year, and possibly someone to work at the Charlotte market and/or go to another market for us. If you know of anyone that might be interested let me know!

We eat a lot of Buddha bowls, like these – or there are about 10, 000 different ways to make them. Lately sweet potatoes, avocado, green salad of some kind, cauliflower, mushrooms and wild rice, then covered in some kind of delicious homemade dressing. I’m always trying new dressings so it doesn’t seem like we’re eating the same thing all the time. I have a Pinterest board of only dressing recipes. It has 68 pins :/ Wednesday I made this Ginger Dressing similar to ones I’ve had at Asian restaurants but this has a veggie base (no oil) and it’s all just thrown in the blender. It’s really good.

I made this delicious soup this week, Cozy Autumn Wild Rice Soup, (coincidentally requiring one pound of sweet potatoes) and added radish greens, baby collards and spinach instead of kale since that’s what I have. I’ve been reading up on how amazing the radish greens are, and although I felt sure they would ruin my delicious soup we gave it a shot. They didn’t ruin it at all and in fact I am currently enjoying said soup with a boatload of chopped black radish greens (they are much more substantial than the red radish greens BTW… I’m kinda on the fence) and fresh chopped green onions. Nom.

AND in unrelated recipe news, I must share the absolute hands-down most perfectย  salted caramel sauce that is amazing on apples, bananas, ice cream and super dope in coffee plus so easy to make in like 10 minutes. Its’s just 1c brown sugar, 1/4 c virgin coconut oil, 1/2 c coconut milk (from the can, not the box) 1 Tbsp vanilla extract, 1/2 tsp sea salt, in a small saucepan over medium heat, stirring til melted then once it simmers turn down to low and simmer a few more minutes, stirring constantly. It probably won’t get very thick while it’s hot but when it’s cool it’s perfect. I don’t like my coffee sweet, but around Christmas I could not stop having salted caramel coffees – so I’m kind of over it now but this recipe is a keeper and must be shared with the world. It’s adapted from the pumpkin cheesecake I made at Thanksgiving.

We went to the Daniel Stowe Botanical Garden this week, Saturday night is the last night for the Holiday Lights. We loved it! The orchid conservatory is unbelievable too. It was really fun, if you’re looking for something awesome to do Saturday night.

Market Stuff for December 29.

I don’t have any pictures, because there’s only mud…so depressing. I just went into the hoop and took this one of lettuce right before I thinned it. It’s even soppy in there from it raining in the side curtains and I can’t close them because then everything will get all slimy and croak. Sigh. Know any jokes?

Since the lettuce was planted way too thickly I have a ton of baby lettuce thinnings so I can have an actual green vegetable in my burrito bowl tonight, which somehow reminded me of this Balsamic Pot Roast recipe. I forgot about it and haven’t made it in forever but it’s so good! It calls for chuck but I’ve always made it with sirloin tip roast. Since it’s gonna rain for another whole week, why not pot roast?

It can stop raining now. This pasture was solid pristine green just a few days before the cows went in; everywhere they step grass turns to slop. He has to go in and out with the skid loader to feed round bales and even with tracks on the loader it slips and slides around. He’s feeding four 1000 lb bales of baleage almost every day.

We were supposed to get our next beef back from the processor so we’d be re-stocked this week but it will be next week.

I already blanketed all the horses. I’m bad to wait until the last minute because I never believe the weather people, and then I’m draggingย  a hundred pounds of blankets out into the sleet and freezing my fingers off fastening a thousand buckles… but in fact I pulled all their blankets out earlier this week and replaced broken straps and re-waterproofed them, and ordered 2 new blankets and everybody is good for wintery mix!!

Market Stuff for November 17.

Last weekend was the first time I’ve ridden since May or June. The wind was really blowing, which is super spooky for some horses – namely mine. He snorts like a pig the whole time (or like a wild stallion, however you want to look at it) but he has had a 6 month vacay from work so he’s just got to get back into the groove.

The ground is so saturated that every step a horse or cow takes turns grass to mud. They put their foot down and it just slides. Ugh, the pastures. Then driving the tractor through to bring hay in…you can’t even imagine the mess. Just where I feed the horses, the mud is so deep it’ll suck your boots off. Ready for this sunny week coming up!!

I have a little baby arugula, a few savoy cabbages, turmeric, 2 kinds of sweet potatoes, some fresh herbs: sage, parsley, mint, chives, and hard red winter wheat.

I love Thanksgiving. So much delicious food. We never have pumpkin pie for Thanksgiving because I haven’t ever been able to grow pumpkins. I make this sweet potato pie instead, and everyone says they like it better! However this year I actually grew some mini pie pumpkins called Cinnamon Girl. They are SO GOOD. One pumpkin makes only one pie, and then I eat the whole pie. Hells yeah. I think there were like 10 of them and now I’m down to five. I usually make something like this healthier version. Mostly on Monday nights when Shane goes to eat with his friends. Pie night ๐Ÿ˜‰
